The Swiss liqueur sticks are famous for their very thin sugar crust. Their ingredients are sugar, water, liqueur and couverture.
Starch trays:
The trays are filled with corn or potato starch. The temperature and humidity of the starch is extreme-ly important. If the temperature of the starch is too high, the sugar solution can not be deposited. If the humidity of the starch is too high, the starch will stick to the sugar crust. If the humidity of the starch is too low, the starch will not "stand up" and the sugar solution can not be deposited.

The sugar solution
Water and sugar are boiled. An ordinary crystallizing syrup is made (oversaturated sugar solution).
Cooking temperature 109°.
The liqueur used for the sticks has generally an alcohol percentage of 65°
The liqueur is added to the hot sugar solution and mixed very slowly.
The mixture is casted in the starch, covered with starch and left in the starch moulds for the crust to form. To ensure a uniform crust, the liqueur centres are turned over when sufficiently crusted on the base of the mould. After the centres are turned over, a crust can also be formed on the on surface. Great care is necessary in handling these centres otherwise the crystal shells will crack.
Enrobing
After 24 – 48 hours the centres are taken out of the starch and are very carefully cleaned and enrobed with chocolate. The cocoa dusted liqueur sticks are dusted with cocoa powder after the enrobing of the product.
